The Forthright Fam met Chris & Susan through mutual connections to The Old Foundation, a local restaurant serving up some of the absolute best meals in the region. When we heard Chris was moving forward with Jackson BBQ we reached to see if a collab was in order! We asked Chris how he found himself here in Sullivan County starting up the newest mobile BBQ joint: "My cousin Ian was opening a restaurant called The Old Foundation in Kenoza Lake, NY, and asked if I could come up and help get it started before opening weekend and maybe work the first few weekends to get it off the ground. I lived and worked in Brooklyn, and had time on the weekends, plus I had been Ian's sous chef previously, so I was happy to come upstate and help him out. For opening weekend Ian and his wife Jessica had hired 2 sisters as waitresses: Susan and Jillian. The first night working together Susan and I hit it off. I wanted to hang out with her more so I told Ian I could continue working at his restaurant on weekends. Long story short, Susan and I began hanging out on our days off and instantly fell in love and hung out every single day for about 2 months until deciding to officially start dating. I left my other job in Brooklyn and started staying at Ian and Jess's apartment while working full time at The Old Foundation. Eventually Susan and I got a place and moved in together and I sold my apartment in Brooklyn. Then Susan got pregnant, and we decided to get married because we knew that we wanted to spend the rest of our lives together.

Susan and I have always wanted to start a business. She supported and encouraged me to follow my dream and open a food truck, and agreed to be not only my partner in life, but partner in business. We purchased a food truck. Then came trying to figure out the food and the name. I've always loved the process of barbecue and slow cooking meats. The food truck I bought was already used as a Barbecue business previously, so we decided we would be a barbecue truck! We went back and forth deciding on names. Then all of a sudden I said "how about Jackson Barbecue" because back in February we had decided to name our future son Jackson. Everyone loved the name and the rest is history! I had no idea that I would end up finding love and relocating to the Catskills! Susan did not either! We both, as downstaters (Brooklyn for me and Long Island for Susan), have generational history in this region. Our grandparents started with summer homes and here we are starting a food business! We are loving the ride!" Learn more about Jackson BBQ and where you can find them this season by following their Instagram here.
